What "running hot" or "running cold" really means
Your oven does not hold one steady temperature. It cycles. The burner or element heats past your setting, shuts off, coasts down, then fires again. A healthy oven swings maybe 25 degrees either side of the number you picked. You never notice. Drift means that swing has moved off center — the average is now 40 degrees high, or 50 low. Food tells you before anything else does. Edges browning while centers stay wet. Bread that will not rise. Baked goods are sensitive; roasts and casseroles hide the problem longer. So by the time you call, it has probably been off for months.
Cause one: calibration has slipped
Cheapest possibility first. Most ovens let you offset the temperature in the control settings, and that offset can drift or get changed by accident. Ovens also lose accuracy as they age, and manufacturers build in an adjustment for exactly that reason. Your manual will show the key sequence. Before you touch it, though, confirm the oven really is off. Guessing from one batch of muffins is not enough. Verify with a thermometer at the center of the middle rack, at temperature, with the door shut. If the oven reads 15 degrees off, calibration handles it. If it reads 75 off, something is failing.
Cause two: the temperature sensor or thermostat
A thin metal probe usually sits inside the oven cavity, near the upper back wall. That sensor tells the control board how hot things are. When its resistance drifts, the board gets bad information and heats to the wrong point. Older ovens use a bulb-and-capillary thermostat instead, which loses its charge over time. On the coast, salt-laden air speeds up corrosion at electrical connections, and a corroded sensor plug reads just as wrong as a bad sensor. Symptoms tend to be consistent — always hot, always cold, same amount. That steadiness is actually useful. It points us straight at the sensing circuit.
Cause three: heat that leaks out or never spreads
An oven can be sensing correctly and still cook wrong. Door gaskets flatten and crack, so heat escapes and the top of the cavity never matches the bottom. A hinge that has sagged leaves a gap you can feel with your hand near the door edge. On convection models, a fan that has stopped turning means no circulation, so hot and cold pockets form. Uneven results — one side scorched, one side raw — usually mean airflow or sealing, not calibration. Also check that you have not lined the bottom with foil. That blocks heat paths and throws readings off badly.
Safe checks, and what we do differently
Safe for you: put an oven thermometer on the center rack and log readings at 350 and 425. Inspect the gasket for gaps and stiffness. Feel for escaping heat around a closed door. Look for foil or debris on the oven floor. Confirm racks are in factory positions. Stop there — do not remove panels, touch gas connections, or probe wiring. When we arrive, we meter the sensor's resistance cold and hot against spec, read stored fault codes, check element or burner cycling with instruments, and inspect connectors for salt corrosion. How far off is too far off?
Within 25 degrees is normal cycling. Consistently 50 or more off at multiple settings needs attention. Uneven cooking across one rack points to sealing or airflow rather than a wrong average temperature.
Can I just set my oven higher to compensate?
It works for casseroles, not for baking. Preheat time and cycling behavior stay wrong, so results vary batch to batch. Compensating also hides a failing sensor that will keep drifting further.
Does hard water have anything to do with it?
Not for the oven cavity itself. Scale matters in steam-assist ovens and self-clean models with water features, where mineral buildup blocks lines. Standard baking drift is electrical or sealing.
